The Tavoliere Plain is home to enchanted landscapes and has been Italy’s granary for thousands of years. The unique climate and soil conditions of the Tavoliere are what make this area rich for growing durum wheat. Durum wheat is what gives our pasta its intense aroma, unique flavor and golden color.

Tradition and Technology
Italian traditions combined with today’s innovations are the foundations to making our incredibly high quality durum wheat pasta. The pasta is consistently controlled for quality and traceability from the very day the wheat is milled through pasta production.

The Pasta
Our Nob Hill Trading Co. Dry Imported Pasta is all natural and made with only durum wheat semolina and water. There are zero preservatives, artificial colors, flavors or additives used – not even a pinch of salt! It’s also a rich source of vitamins, minerals and protein.

What’s the difference between “fresh” pasta and “dry” pasta? Fresh pasta is made with eggs and flour, pressed and cut or formed into noodles. Dry pasta is made from semolina flour (durum wheat) and no eggs. It’s then molded and dried at a low temperature until the water evaporates. Dry pasta is commonly used with heavy cream-based sauces or pesto because it holds up well.
