Inspired by seasonal produce, Chef Talde combines protein-rich shrimp, sweet, antioxidant-rich Northwest cherries and fresh avocados for a salad to serve as a main meal or light summer side dish for healthy eating any day of the week.
Grilled Shrimp, Avocado and Cherry Salad Prep Time: 30 minutes Serves: 4
2 lbs Shrimp, peeled and deveined
2 oz Garlic
3 oz TABASCO
4 oz Olive Oil
1 lb Northwest Cherries, pitted
2 Avocados, halved
2 Limes, juiced
1 bunch Cilantro
3 oz Roma Tomatoes, medium diced
3 tbs Olive Oil
Salt and Pepper to taste
Peel and devein shrimp. Combine shrimp with garlic, TABASCO and olive oil. Let marinate for one hour.
Meanwhile, take halved avocados and season with salt and pepper. Place on grill skin side up and grill for two minutes. Turn 45 degrees for nice hatch marks. Reserve.
On the same grill, add shrimp. Cook two to three minutes on each side until cooked through.
In a bowl, add cherries, cilantro, olive oil, lime juice, and salt and pepper.
Add sliced grilled avocado and tomatoes. Give a light toss and plate. Place cooked shrimp on top.
